I have found that when we make our batches in the spring and summer, they come out wonderful. cut like butter as well; however, when we have made it in the fall... guess what? it cracks and crumbles! i live in NH and perhaps it has to do with the humidity in the air and/or the heat in the house as well. I am not sure. I am in search of the answer myself.
